Pecan Pie with Bavarian Torte Topping

  • Crust
    1 c all-purpose flour
    1/2 tsp salt
    6 tbsp Crisco shortening
    2 1/2 tbsp cold water
  • Filling
    1 c Karo light corn syrup
    3 eggs
    2 c sugar
    2 tbsps unsalted butter
    1 tsp vanilla extract
    1 1/2 c pecans
  • Topping
    3 oz crème cheese
    1/3 c light brown sugar
    1/2 tsp vanilla extract
    Pinch of salt
    1 c Cool Whip
    1 oz chopped pecans
  • Directions
    Make crust, place in pie pan. Filling: mix first 3 ingredients, add butter, vanilla and pecans. Pour in unbaked pie shell. Bake at 350 for about 55 minutes. Cool thoroughly. Prepare topping. Mix cream cheese, light brown sugar, sale and vanilla extract until creamy. Fold in Cook Whip and chopped pecans. Layer topping on tn top of pecan pie. Refrigerate.

 

Bananabama Pie

  • Ingredients
    3/4 c firmly packed brown sugar
    2 tbsp flour
    3/3 tsp cinnamon
    1/8 tsp nutmeg
    7 or 8 large bananas
    6 tbsps orange juice, no pulp
    3 tbsps butter
    2 crust pie dough
    1 egg yolk
    White sugar
  • Directions
    Mix brown sugar, flour, cinnamon, and nutmeg in small bowl. Slice bananas and mix with orange juice in large bowl. Sprinkle bananas with brown sugar mixture and stir gently. Pour into bottom pie crust and dot with butter. Put on top crust and crimp edges. Cut steam slits in top crust. Brush with 1 egg yolk mixed with a little water then sprinkle with a little white sugar. Cover edge of crust with foil or pie ring. Bake at 400 for 25-30 minutes.

 

Rocky Road Pie

  • Pie Shell
    Chocolate Wafer Crust
  • Filling
    8 cups Jell-O Pudding Snacks
    1 1/2 c miniature marshmallows
    2 oz. chopped pecans
    1 tbsp. almond bark shavings
  • Topping
    3 oz. cream cheese
    8 oz. Cool Whip
    1/3 c light brown sugar
    1/2 tsp vanilla
    pinch salt
  • Directions
    Put 4 cups of pudding into pie shell. Layer marshmallows, followed by 1 oz. of pecans. Add remaining pudding. Top with the topping. Sprinkle with the remaining pecans and almond bark shavings. Refrigerate.
