SAN ANTONIO (Nov. 15, 2019) –On Thursday, November 14, ReWorksSA celebrated World Recycles Day with a panel discussion on reducing food waste. A keynote address was given by Solid Waste Management
Director, David McCary. Of the department’s recycling efforts, Director McCary said, “Don’t let anyone tell you there is doom and gloom, we have a very positive outlook”.

The panel discussed achieving a more sustainable San Antonio through reducing food waste, composting and utilizing area farmers and local produce. A common theme was eliminating waste in food production and serving.
Chef Steve McHugh discussed how utilizing whole animals and working directly with area farmers has reduced food waste in his Pearl area restaurant. “I’ve always been acutely aware that when you throw trash away,
